Better idea would be to write to the iVolume support. I found your question by accident. Nevertheless, I'll try to answer it here:
iVolume is repairing the 'Sound Check' function of iTunes. When turning on 'Sound Check', iTunes calculates its own idea how loud your songs are, and writes this information in a tag named 'iTunNORM' into your songs. This adjustment information is then used at Playback time to play a song softer or louder. iVolume displays this adjustment information for each individual song. Because all songs are different in volume, all sliders show a different adjustment, of course.
Unfortunately iTunes' idea how loud a songs is, is not very good. That's where iVolume comes into the game: when processing your songs with iVolume, it calculates the loudness that's perceived by the human ear for each song and then iVolume replaces the information in the iTunNORM values (that are used for the 'Sound Check' function) with perfect values. So iVolume effectively 'repairs' the Sound Check function of iTunes (and all iPods, iPhones, Apple TV ..).
So when you start processing your songs with iVolume, you'll see the adjustment sliders 'jump' to different (the 'perfect') positions.
